Festive Dessert Recipes to Sweeten the Season

Blackberry Fool 

We made Emma’s mum’s easy blackberry fool for our photoshoot, using whipped up clotted cream stirred through with stewed blackberries. It’s a super quick but impressive pud that we’re assured always goes down a treat! You could also try it with any other tart fruit or berry you have. 

Cheat’s Trifle

A Christmas classic made even easier by using shop-bought shortcuts, recommended to us by food writer Ghillie James. Make a big dish of this festive trifle, then serve at the table into Silver Birch Dessert Bowls for a real dinner party showstopper. Serves 4-6 

Ingredients:

• 1 shop bought Madeira sponge cake
• 1 jar of raspberry jam
• 100ml Sherry or brandy
• 250g fresh or frozen raspberries
• 500ml pot of fresh custard
• 300ml double cream, whipped and sweetened with 1tbsp caster sugar 

1. Slice the ready bought sponge into fingers and spread with a thick layer of jam on one side. 
2. Add the sponge fingers to your trifle bowl, jam side up, then drizzle with the tipple of your choice. 
3. Crush up the raspberries and spoon them over the sponge.
4. Then, pour over the custard. 
5. Top with the sweetened cream, and decorate with sprinkles to finish. 

Chill up to 6 hours ahead of serving.
